臭豆腐是人人所知的國民小吃,台灣街頭美食的象徵。酥脆的臭豆腐,搭配觀音山主廚特製『黃金私房泡菜』,一口咬下外酥內軟,搭配泡菜和醬汁真是絕配!疫情期間在家自己動手做料理,健康又美味~

●主食食材:
臭豆腐 | 4~6塊 |
高麗菜 | 2斤 |
紅蘿蔔 | 35克 |
大辣椒 | 35克 |
地瓜粉 | 適量 |
香油 | 100c.c |
辣油 | 依個人辣度添加 |
白醋 | 265c.c |
糖 | 160克 |
老薑 | 65克 |
薑黃粉 | 5克 |
鹽 | 適量 |
●素食料理簡單做 開始!
步驟一 :
【刀工/前處理】
(1)臭豆腐一開四切塊。
(2)紅蘿蔔切片。
(3)大辣椒去籽切段。
步驟二:
【⭐️飄香酥豆腐】
(1)臭豆腐沾地瓜粉。
(2)油鍋加熱至180度。
(3)放入臭豆腐炸至金黃色。
步驟三:
【⭐️黃金私房泡菜】
(1)高麗菜洗淨去心,將菜撥成片狀,撒適量鹽巴靜置。
(2)泡菜醬: 果汁機放入薑、紅蘿蔔、辣椒、薑黃粉、糖、辣油、香油、及白醋,攪打均勻。
(3)做法1.將水擰乾,倒入泡菜醬料拌勻,靜置30分鐘即可。

Stinky tofu can be taken as a Taiwanese national small eat and a symbol of Taiwanese street food. The well fried stinky tofu can taste the crunchiness skin as well as fluffiness inside. Eating with kimchi brings you the comforting flavors. The crispy stinky tofu matches so well with the golden handmade Kimchi specially made by the chef of Guanyinshan. Let's cook at home during the epidemic. It's healthy and delicious~ Quickly follow the chef of Guanyiinshan, let's cook simple vegetarian dishes together!
🥣Ingredients : (For 5 people)▪Stinky tofu 4~6
▪Two catty of Cabbage
▪Carrot 35g
▪Big Chili 35g
▪Potato Starch , adequate amount
▪Sesame oil 100c.c
▪Chili oil , Add according to personal spicy
▪White vinegar 265c.c
▪Sugar 160g
▪Ginger 65g
▪Turmeric 5g
▪Salt , adequate amount
🥣Cooking steps:
【Cutting/ Beforehand preparation】
(1)Cut stinky tofu into four pieces.
(2) Carrot slices.
(3) Remove seeds and cut large peppers into sections.
⭐️Crispy Tofu:
1. Dust stinky tofu with sweet potato powder.
2. Heat the oil to 180 degrees in a pan.
3. Add stinky tofu and fry until golden brown.
⭐️Golden Private Homemade Kimchi:
1. Wash the cabbage; cut lengthwise through the stem; remove the core; take apart the cabbage leaves and sprinkle some salt; then set aside.
2. Kimchi sauce: Put ginger, carrot, chili, turmeric powder, sugar, chili oil, sesame oil, and white vinegar into the blender, and well mixed.
3. Method 1. Squeeze out the excess water, pour the kimchi sauce in and mix well; then set aside for 30 minutes.
